This Weeks Recipe
ASIAN QUINOA WRAPS
1 Cup Red Quonoa
2 cups water
2 Crisp Apples
1 Yellow Pepper (roasted)
1 Red pepper (roasted)
1/2 small onion
1 c. canned chickpeas
2 tsp horse radish
2 tsp. sesame oil
1/2 Fresh squeezed Lemon
fresh chopped parsley
SPG (salt, pepper, garlic)
Boil your quinoa for 15 minutes until the water dissipates, spread the quinoa out on a tray to cool, Add your sesame oil, SPG, vegetables and zest. set aside at room temp.
Sliced you apples very thin and mix in your parsley, lemon juice and roasted red peppers and onions. set aside and Chill
Rinse your chickpeas, stir in horseradish
PLATING
Smear a little hummus on your butter lettuce cups then fill with the quinoa Salad.
Serve with a healthy stack of your chilled apple/roasted pepper slaw and a pile of horseradish chickpeas along with your favorite dipping sauce. I used sweet Thai chili sauce
